Michel Guérard, the chef who gave French cooking the term cuisine minceur and held three Michelin stars at a single address continuously since 1977, died in August 2024. What could have been a moment of real uncertainty for Les Prés d'Eugénie (Maison Guérard), his family's estate built around a natural thermal spring in the Landes, instead became a demonstration of how deliberately he had prepared for it.

His daughters, Éléonore and Adeline Guérard, have carried the eight-hectare property forward, and Restaurant Michel Guérard, now led in the kitchen by Chef Hugo Souchet, has held onto all three stars in the Michelin Guide's subsequent editions. That continuity matters in an industry where losing a founding chef often means losing the rating within a cycle or two.

The estate's second restaurant, L'Orangerie, also under Souchet, has built its own identity in parallel, recently earning its own Michelin star and giving the property two starred kitchens under one roof. Guests split between the Grande Maison, the Couvent des Herbes with its herb gardens, and the village-set Logis des Grives, all drawing on La Ferme Thermale, the same geothermal spring that shaped Guérard's original cuisine minceur philosophy decades ago.
