Château Saint-Martin & Spa reopened for the 2026 season, running from May 1 through October 11, with Chef Romain Antoine now dividing his year between the Vence property and L'Apogée Courchevel, moving between the two Oetker addresses as the seasons shift from mountain to Riviera. His cooking leans on terroir, letting product, seasonality, and a fairly instinctive sense of emotion guide the menu rather than any single fixed formula.

The hotel's spa has built its own strong reputation independent of the kitchen, having been voted Best Luxury Spa Destination in Europe by the World Luxury Spa Awards. Set on a hillside above Vence with sweeping views toward the Mediterranean, the property has always leaned on its setting as much as any single amenity, and the spa recognition only reinforces how much of the hotel's identity is built around genuine rest rather than spectacle.

Having Antoine split his time between Château Saint-Martin and Courchevel gives Oetker Collection's French guests a rare kind of continuity, the chance to follow a chef's cooking across two completely different landscapes within the same year. For repeat guests loyal to either property, that continuity is likely to matter more than any single seasonal menu change.
