Château de la Chèvre d'Or has spent a century perched on the ramparts of Èze, the medieval hill village wedged between Nice and Monaco, and it enters 2026 with its culinary reputation as strong as its clifftop views. The hotel's gastronomic restaurant retains two Michelin stars this year, the result of a kitchen handover in 2024 that handed the reins to Chef Tom Meyer, a Meilleur Ouvrier de France, one of the most demanding professional titles in French cooking.
Meyer inherited more than a dining room. He took charge of all four of the property's food and beverage outlets at once, from the gastronomic flagship down to the poolside Café du Jardin, a rare mandate that let him rework the entire guest experience in a single season rather than restaurant by restaurant. The seasonal Les Remparts terrace, open only from April through October, shifts from lunch service to cocktail bar as the sun sets over Cap-Ferrat, and it now carries Meyer's imprint too.
What makes the setting remarkable is that none of it required new construction. The hotel occupies a genuine medieval castle, rebuilt in the 1920s, with 45 rooms and suites individually named for the composers, philosophers, and writers who left their mark on the village, Nietzsche among them. Meyer's arrival simply gave the kitchen a culinary authority that matches the weight of the address itself.
