Mandarin Oriental, Tokyo's 38th floor houses one of the city's more distinctive sushi rooms in Sushi Shin by Miyakawa, the first Tokyo branch of Hokkaido's three-Michelin-starred Sushi Miyakawa, led by Chef Masaaki Miyakawa. The restaurant is built around a 350-year-old hinoki cypress sushi counter, sourcing daily from Hokkaido and Tokyo's Toyosu market, with sweeping views of Tokyo Skytree from its perch above the city.
One floor below, Signature, the hotel's French restaurant, holds its own Michelin star under Chef Boujema, giving the hotel two genuinely distinct fine-dining identities within a few floors of each other, one rooted in Hokkaido's sushi tradition, the other in French technique applied at altitude over Nihonbashi.
