The St. Regis Cap Cana Resort opened on May 1, 2025, marking St. Regis's debut in the Dominican Republic within the exclusive Cap Cana enclave. The resort's 200 guestrooms and 36 suites arrived alongside nine separate food and beverage venues, a genuinely ambitious dining lineup for an opening property.

Nina, the resort's dinner restaurant, was developed in collaboration with chef Diego Muñoz, while Cassava serves all-day Latin American cuisine, The Amber Room operates as a rum and cigar bar, and Carey Bay Seaside Bar rounds out the beachfront offerings. Perhaps most notably, the resort positioned itself as one of the first ultra-luxury European Plan resorts, room-only rather than all-inclusive, in a region where all-inclusive resorts have long dominated.

That positioning is a genuine bet on a different kind of Dominican Republic traveler, one seeking à la carte dining and flexibility over an all-inclusive package.
