Rosewood Mandarina Opens Toppu, a Mountaintop Japanese-Peruvian Restaurant With Chef Diego Muñoz

Rosewood Mandarina opened its doors in May 2025, becoming Rosewood's fourth Mexico property and bringing 134 accommodations, including two standalone villas with private plunge pools, to a 565-acre site on the Riviera Nayarit. It marked a significant expansion of the brand's already substantial Mexican footprint.

By October 2025, the resort had added Toppu, a mountaintop Japanese-Peruvian restaurant developed jointly by Rosewood Executive Chef Jose Vicente Mascarós and celebrated Peruvian chef Diego Muñoz, drawing on Lima's Nikkei culinary tradition. Building a restaurant around Nikkei cuisine, which blends Japanese technique with Peruvian ingredients, gave the resort a genuinely distinctive dining concept within its first year.

The recognition followed quickly, with Rosewood Mandarina named to the 2026 Travel + Leisure It List, validation for a resort not even two years old. For a coastline that already includes several major luxury resort brands, Mandarina's combination of scale, sustainability-forward siting, and a genuinely unusual restaurant concept has helped it stand out fast.
