Four Seasons Hotel Seattle Reimagines Goldfinch Tavern With Ethan Stowell

Four Seasons Hotel Seattle reimagined its restaurant Goldfinch Tavern in collaboration with Seattle restaurateur and chef Ethan Stowell alongside Goldfinch's own Chef Jeffrey Hunter, with a redesign unveiled in 2026 that added a new centerpiece bar and a wine gallery. The refreshed room leans into a Pacific Northwest-focused menu, tying the restaurant more closely to its regional larder.

The culinary changes followed the arrival of Andrea Ferrandi as Executive Chef in April 2025, giving the hotel new leadership across its food and beverage program. In February 2026, the property was named Best Hotel in Washington by U.S. News, recognition for a hotel with one of the best waterfront positions in the city.

Overlooking Elliott Bay from its perch near Pike Place Market, the hotel pairs a prime downtown location with sweeping views toward the Olympic Mountains. The reimagined Goldfinch Tavern gives it a restaurant with local credibility to match.
