Four Seasons Hotel Miami brought in serious international culinary talent for its spring 2025 dining expansion. NUNA, a Nikkei concept blending Japanese technique with Peruvian ingredients, opened under award-winning Peruvian chef Jaime Pesaque, giving the hotel a genuinely distinctive addition to Miami's already crowded Nikkei dining scene.
New Executive Chef Edouard Deplus, who combines French technique with South Florida farm ingredients, oversees the hotel's broader culinary program. The hotel also hosted a monthlong residency from James Beard Award-winning Chef Nina Compton, known for Compère Lapin in New Orleans and her Caribbean and Creole cooking, a limited-run collaboration that gave Miami guests access to her food without a trip to Louisiana.
Between Pesaque's Nikkei debut, Deplus's French-Floridian direction, and Compton's guest residency, Four Seasons Hotel Miami built out a genuinely varied culinary calendar in a single season. A future lobby and check-in renovation is planned to match that dining ambition.
