Four Seasons Hotel Las Vegas relaunched its signature restaurant, Veranda, as Veranda California Brasserie in November 2025, led by Executive Chef Michael Goodman with Sous Chef Jason D'Angelo and Pastry Chef Maruschka Ang. The new concept sources from California and Nevada farms, giving the restaurant a lighter, produce-driven identity distinct from the heavy steakhouse fare that dominates much of the Strip.

The relaunch came as the hotel earned a Michelin Key in October 2025, its second consecutive year holding the distinction. Occupying the top floors of the Mandalay Bay tower yet operating as a self-contained, non-gaming Four Seasons, the hotel has long offered a quieter alternative to the casino resorts around it.

That separation from the gaming floor is precisely the point for many guests, and a refreshed, farm-focused restaurant reinforces the hotel's calmer positioning. Veranda California Brasserie gives returning visitors a genuine reason to revisit.
