Eden Rock – St Barths: Three Beachside Restaurants Under Jean-Georges Vongerichten

Eden Rock St Barths runs its entire beachfront dining program under chef Jean-Georges Vongerichten, whose culinary direction spans three distinct venues facing directly onto St. Jean Bay. The Sand Bar remains the most casual and arguably the most photographed of the three, a barefoot lunch and cocktail spot that has become genuinely iconic within the wider St. Barths dining scene, not just among hotel guests.

The current version of the resort dates to a full renovation completed in the aftermath of Hurricane Irma in 2017, with new and redesigned suites, a rebuilt gym, spa, and pools all part of the project. Oetker Collection has been part of the property's ownership structure since 2014, when the Matthews family, longtime owners of Eden Rock, invited the Oetker family to co-invest and partner on the resort's future.

Eden Rock celebrated 70 years in business with a dedicated coffee table book tracing the resort's history, a milestone that puts it among the older continuously operating luxury properties in the entire Caribbean. Perched on its own rocky promontory jutting into St. Jean Bay, the resort's setting alone has always done a lot of the work in explaining why it has held onto its reputation for seven decades running.
