Chef Paul Kinny, Director of Culinary at The St. Regis Mumbai and a veteran of more than 32 years in the industry, was named Head of Culinary, West Zone at the 9th BW Hotelier Indian Hospitality Awards 2025, recognition that extends his influence beyond the hotel's own kitchens into the broader regional culinary scene.
The hotel's guest-chef programming has matched that level of ambition. By The Mekong hosted a two-night residency, June 25 and 26, 2026, with Toyo Eatery of Manila, a One MICHELIN Star restaurant named Best Restaurant in the Philippines 2025, winner of the Gin Mare Art of Hospitality Award 2025, and ranked No. 71 on Asia's 50 Best Restaurants 2026. A separate Vietnamese pop-up ran March 13 and 14, 2026, adding another regional cuisine to the hotel's rotating culinary calendar.
Between Kinny's regional recognition and a guest-chef roster pulling from some of Southeast Asia's most decorated kitchens, The St. Regis Mumbai has positioned its dining program as a genuine cross-regional culinary exchange rather than a single fixed menu.
