For the rarest and most sought after wines, the shop shelf is rarely where the story ends. A handful of houses dominate the top of the market. Sotheby's and Christie's, long the great names in art, run major wine departments, joined by specialists such as Acker, Zachys, and Bonhams. Their sales are staged around the world, and Hong Kong in particular has risen to become one of the most important centers of the trade, reflecting the vast appetite for fine wine across Asia. Each house devotes enormous effort to researching and presenting the wines it offers, because at this level a bottle's history is as important as its label.

The mechanics will be familiar to anyone who has followed an art sale. Wines are grouped into lots, each carrying a pre sale estimate and, often, a confidential reserve below which the seller will not part with it. Bidders compete until the hammer falls, and the winning bid, plus the house's buyer's premium, becomes the final price. A lot that fails to reach its reserve goes unsold, while a great rarity can ignite a bidding war that pushes it far beyond expectation and, occasionally, into the record books.

What gives the auction market its particular character is the premium it places on provenance and condition. A wine's value can rise or fall dramatically on where it has been kept and how it can be traced, which is why the finest lots are those sold directly from a château or from a single impeccable cellar, complete with their original wooden cases.
