Château d'Yquem and the World's Finest Sweet Wines

There is a paradox at the heart of the world's greatest sweet wines. They are made not from perfect, healthy grapes but from fruit that has been attacked by a fungus and left to shrivel on the vine. The fungus is Botrytis cinerea, and when it strikes under the right conditions of morning mist and afternoon sun it becomes noble rot, drawing the water from each grape and concentrating the sugar, acid, and flavor into something extraordinary. From this unlikely process comes a wine of almost impossible richness, and its supreme expression is Château d'Yquem.

Yquem sits in Sauternes, a small district within Bordeaux, and it occupies a category all its own. When the region's estates were ranked in the famous classification of 1855, Yquem alone was named Premier Cru Supérieur, a rank above even the First Growths, a distinction no other Sauternes has ever held. The wine's greatness is bought through extraordinary labor. Because the rot spreads unevenly, pickers must pass through the vineyard again and again over many weeks, selecting only the individual berries that have shriveled to perfection, so that an entire vine may yield little more than a single glass. In years when the conditions fail to deliver, the estate, now owned by the luxury group LVMH, simply declares no wine at all rather than lower its standard.

The result rewards the sacrifice. A great Yquem is golden in the glass and tastes of apricot, honey, and candied citrus, yet it is held together by a bright seam of acidity that keeps it from cloying and allows it to age for a century or more. Old bottles, far from fading, grow deeper and more complex with the decades, which is why Yquem is among the most age worthy wines on earth and a fixture of serious cellars. Its prestige runs so deep that the estate's vines even lend their sap to a luxury skincare line.

Sauternes is not alone at the summit of sweet wine. Neighboring estates such as Climens and Rieussec produce their own botrytis wines of great distinction, while beyond Bordeaux the honeyed Tokaji of Hungary, once served at royal courts, and the intensely concentrated late harvest wines of Germany belong in the same exalted company. Each achieves sweetness through nature's patience rather than any shortcut, and each can age for generations.

For the collector, the finest sweet wines offer a rare combination of longevity and value.
