The Ritz-Carlton Bacara, Santa Barbara sits north of the city on the Gaviota Coast, a stretch of undeveloped California shoreline where the mountains meet the Pacific. Spanish-Colonial architecture, 78 acres of grounds, and three zero-edge pools give the resort the feel of a self-contained coastal village, and the hillside spa looks out over the water.

The dining is the resort's quiet strength. Marisella brings Amalfi Coast tradition together with California's land and sea through handmade pastas, wood-grilled seafood, and expertly crafted martinis, while Lulio serves Mediterranean-inspired plates with panoramic ocean views. Just beyond the lobby, 'O' Bar & Terrace pours agave-based spirits alongside modern Latin cuisine, named for the Chumash word for water. Up in the resort's upper village, Mission Market handles coffee, house-made pastries, and artisanal goods, and SunBar keeps the poolside crowd fed with shareable bites.

It is a resort built for slow days, and the Gaviota setting rewards them. Between the pools, the spa, and the walk down to the beach, there is little reason to leave the property.
