Relais San Maurizio occupies a restored 17th-century monastery on a hilltop in the Langhe, the rolling wine country of southern Piedmont whose vineyards are a UNESCO World Heritage Site. Surrounded by the hills that produce Barolo, Barbaresco and Moscato, it is one of the most atmospheric bases from which to explore Italy's greatest red-wine region.

The dining is a highlight. Guido da Costigliole holds a Michelin star, set in the monastery's ancient cellars, where chef Luca Zecchin gives traditional Piedmontese cuisine a contemporary twist; and the Origini Bistrot serves slow-food, farm-to-table dishes from the estate's organic gardens.

For a wine-country stay in the Langhe with a serious kitchen, Relais San Maurizio is a standout.
