When Cheval Blanc Paris opened in the former Samaritaine on the banks of the Seine, its gastronomic restaurant Plénitude did something no restaurant had done before: it earned three Michelin stars in its very first year of operation, a record in the guide's history.

Chef Arnaud Donckele, who had already earned three stars on the Riviera, built Plénitude around sauces and infusions of extraordinary complexity, a deeply personal, almost lyrical cuisine that the Michelin inspectors rewarded at the highest level, immediately. The dining room looks out over the Seine and the Pont Neuf, a setting to match the cooking.

Three Starred Tables
Plénitude is only the summit. Cheval Blanc Paris also holds a star at Le Tout-Paris, the contemporary Parisian brasserie on the seventh floor, and another at Hakuba, its Japanese restaurant, while the Italian Langosteria spills onto a tree-lined terrace with some of the finest rooftop views in the city. Few hotels anywhere carry a culinary line-up like it.
