The hotel's former monastery cloister makes for one of the most atmospheric aperitivo settings above Florence, Negronis included.

Arrive around six, when the light turns gold over the garden and the first round of small bites, crostini, olives, house-cured meats, comes out alongside the cocktail list. It is a quieter, more contemplative version of aperitivo hour than the crowded bars in the city center, and the view toward the Duomo makes it worth the trip up the hill on its own.
