The Restaurant at Amansara occupies the circular sala that was the heart of King Sihanouk's guest villa in the 1960s — a remarkable space with a soaring wooden ceiling and views over the resort's pool. The kitchen serves classic Khmer dishes with the precision and lightness that Aman brings to local cuisines everywhere: fish amok, lap khmer, and banana blossom salads that taste like the country they come from.
Breakfast here, when the sala is cool and the pool is quiet, is one of the better ways to start a morning in Siem Reap.
