Rosewood Amsterdam's Eeuwen Debuts Under Chef David Ordóñez, Then Earns Two Michelin Keys

Rosewood Amsterdam opened inside the former Palace of Justice, taking reservations for stays from June 1, 2025, and it wasted no time establishing a culinary identity. Chef David Ordóñez, whose résumé includes Oud Sluis, Restaurant Fäviken, and Dinner by Heston Blumenthal, launched Eeuwen, meaning centuries in Dutch, in May 2025, a name chosen specifically to reflect the building's own layered history.

The recognition followed quickly. Rosewood Amsterdam earned two Michelin Keys in 2025, the Michelin Guide's hotel-rating counterpart to its restaurant stars, and was ranked number one in Robb Report's 50 Greatest Luxury Hotels on Earth for 2025. The hotel also landed spots on Condé Nast's 2026 Hot List and Travel + Leisure's 2026 It List, a genuinely rare sweep across four separate major recognitions within its first year.

Converting a former courthouse into a luxury hotel is the kind of project that could easily lean on its architecture alone, but Ordóñez's Eeuwen gave Rosewood Amsterdam a culinary program strong enough to earn recognition on its own terms. For a hotel not even two years old, that combination of building and kitchen has made it one of the most talked-about openings in recent European hospitality.
